The concept of Andolini’s comes from brothers Jim Bausch, a relentless chef for 24 years; and Mike Bausch, head Pizzaiolo and member of the World Pizza Champions. The two brothers are committed to making food the RIGHT way, not the cheap way. Jim and Mike’s relentless insistence of using the best products is a result of their experiences in the US Marine Corps and growing up with a father who is a USMC Lt. Colonel (Ret.).
Average chain restaurants use as many pre-made and packaged products as possible. They’re full of additives and chemicals. You won’t find any of that in Jim and Mike’s kitchen. At Andolini’s everything is made from scratch, using FRESH ingredients without additives.
Everything that’s served at Andolini’s is prepared following Jim and Mike’s specialized recipes. That means the smoked mozz is smoked using fresh hickory chips, the pistachio pesto is blended from fresh basil leaves, extra virgin olive oil and real pistachios. The meatballs are a special mixture of ground beef, Italian sausage and fresh basil. The DELICIOUS whole milk mozzarella is made by hand using fresh curd! The pizza dough is made from specially milled high gluten flour made here in Oklahoma and hand tossed for each order.
